Instructions

  1. 1 **Microwave the squash before cutting.** Just pop it in for 5 minutes to soften it and it makes it so much easier to cut in half.
  2. 2 **Properly cook the spaghetti squash:** For perfectly cooked spaghetti squash, roast it until it’s just fork-tender. Overcooking can make it mushy. Let it cool slightly before shredding into strands.
  3. 3 **Serve Immediately:** This dish is best enjoyed fresh out of the oven when the cheese is melty, and the squash is at its best texture. ![Image 28: Closeup of a fork scooping up a baked feta spaghetti squash with cherry tomatoes and garlic.](blob:http://localhost/659926dcafebe7d5f163fbc40297dcc3) For storing your leftover Spaghetti Squash with Feta, let it cool down and then place it in an airtight container in the fridge for up to 3 to 4 days. When you’re ready to reheat, pop it in the oven at 350°F or gently warm it in the microwave on a lower power setting to keep the squash and cheese in good condition. It’s not a good idea to freeze Spaghetti Squash. Freezing and then thawing it can really mess with the texture, turning the squash watery and mushy, and the feta might not fare well either, likely becoming grainy. Spaghetti squash can release moisture during cooking. To minimize this, make sure you bake the squash cut side up and don’t overcook it. Letting it rest for a few minutes after baking can also help the excess moisture evaporate. ![Image 30: Closeup of a fork scooping up a baked feta spaghetti squash with cherry tomatoes and garlic.](blob:http://localhost/659926dcafebe7d5f163fbc40297dcc3) [![Image 32: Homemade gravy from turkey drippings](blob:http://localhost/a052e4010fff8c6a066f1693da8b999b)](https://feelgoodfoodie.net/recipe/peanut-butter-pancakes/) [![Image 34: Homemade gravy from turkey drippings](blob:http://localhost/a052e4010fff8c6a066f1693da8b999b)](https://feelgoodfoodie.net/recipe/dry-brined-turkey/) [![Image 36: Homemade gravy from turkey drippings](blob:http://localhost/a052e4010fff8c6a066f1693da8b999b)](https://feelgoodfoodie.net/recipe/applesauce-cake/) [![Image 38: Homemade gravy from turkey drippings](blob:http://localhost/a052e4010fff8c6a066f1693da8b999b)](https://feelgoodfoodie.net/recipe/turkey-gravy/)
  4. 4 **Keri**says: April 21, 2026 at 8:59 pm Is the squash supposed to be crunchy. I extended the cook time. My husband loved it. I did not. [Reply](https://feelgoodfoodie.net/recipe/feta-spaghetti-squash/#comment-174472)
  5. 5 **Yumna J.**says: April 23, 2026 at 10:21 am I’m so glad your husband loved it, but I’m sorry it wasn’t a hit for you. The squash should be tender, not crunchy, so it may have just needed more time depending on the size and ripeness of the squash. I appreciate you sharing your feedback! 6. 6 **John**says: January 15, 2026 at 10:33 am This is a fantastic recipe! SUPER easy to make, and has lovely Bruschetta vibe, with the feta adding a nice, earthy bite to it. Take to heart the tip about the SIZE of the squash – go on the smaller side (or add more tomatoes!). I will make this many more times, and use it as a platform for other combinations. Thank you for posting! [Reply](https://feelgoodfoodie.net/recipe/feta-spaghetti-squash/#comment-165387)

  16. 16 **Marie**says: October 12, 2024 at 7:07 pm Why does it say there are 42 carbs in 1/2 of this? There are not many carbs in the squash or the feta cheese! I am confused. [Reply](https://feelgoodfoodie.net/recipe/feta-spaghetti-squash/#comment-129900)
  17. 17 **Yumna J.**says: October 14, 2024 at 4:35 pm Hi Marie, 1 cup of spaghetti squash is about 10 grams of carbohydrates and a large spaghetti squash can yield 6-8 cups. Most of the carbs in this recipe come from spaghetti squash!
