How to grow your own marshmallows!

Ingredients

  • 1 cup cold infusion of marshmallow root (1 cup water poured over 2 tbsp dried marshmallow root or 1/3 fresh steeped overnight in the fridge)
  • 4 tbsp gelatin
  • 1 cup honey, maple syrup or sugar
  • 1/2 cup water
  • 2 tsp vanilla or flavoring of choice

Instructions

  1. 1 Add the marshmallow cold infusion to the bowl of an electric mixer. Sprinkle gelatin into that same bowl and let it bloom for 2-5 minutes.
  2. 2 In a small saucepan, add the sweetener and 1/2 cup water and bring to a rolling simmer until it reaches 240°F or until a light drop of that syrup into a separate cold cup of water produces a soft ball.
  3. 3 Drizzle the hot syrup into the mixing bowl with the whisk turned on low.
  4. 4 Once all syrup is in, turn the mixer to high and let it run for 5-8 minutes or until soft peaks form.
  5. 5 Add extract or flavorings in the last couple of minutes or once the bowl is cool to the touch.
  6. 6 Pour into a lined baking dish and let sit overnight to firm up.
  7. 7 Cut and enjoy!
