Instructions

  1. 1 **Don’t overboil the onions.** You want them soft enough to separate, but not so soft that they tear easily when rolling.
  2. 2 **Rinse the rice well.** This keeps the filling from getting gummy and helps the grains cook up nicely inside the onion layers.
  3. 3 **Don’t pack the filling too tight.** The rice expands while baking, so leave a little room inside each roll.
  4. 4 **Pack them snugly in the pan.** This keeps the ground beef stuffed onions upright and prevents them from unraveling as they bake. This usually happens if the rolls were packed too tightly or if there wasn’t enough liquid in the pan. Make sure the sauce covers the bottom of the dish well and that you leave space inside each onion roll. This usually happens if the onion layers were overboiled or if they weren’t packed snugly in the pan. You want the boil the onions just soft enough to separate, but not too soft that they feel mushy. Also, make sure to place them seam-side down and arrange them tightly so they support each other as they bake. ![Image 18: Ground beef rice stuffed onions on a serving plate with one onion cut open to show filling inside, served with yogurt.](https://feelgoodfoodie.net/wp-content/uploads/2026/02/Stuffed-Onions-16.jpg) [![Image 19: Peanut butter pancakes stacked on a plate with sliced bananas on top, melted, drippy peanut butter poured over and maple syrup being poured lightly on top.](https://feelgoodfoodie.net/wp-content/uploads/2026/09/Peanut-Butter-Pancakes-08-348x522.jpg)](https://feelgoodfoodie.net/recipe/peanut-butter-pancakes/) [![Image 20: Whole dry brined turkey on a large platter on top of fresh herbs.](https://feelgoodfoodie.net/wp-content/uploads/2025/09/Dry-Brined-Turkey-08-348x522.jpg)](https://feelgoodfoodie.net/recipe/dry-brined-turkey/) [![Image 21: Applesauce cake in the baking dish topped with cream cheese frosting with apple butter swirl, cut into 24 pieces with a few pieces propped up to see inside.](https://feelgoodfoodie.net/wp-content/uploads/2026/09/Applesauce-Cake-8-348x522.jpg)](https://feelgoodfoodie.net/recipe/applesauce-cake/) [![Image 22: Homemade gravy from turkey drippings](https://feelgoodfoodie.net/wp-content/uploads/2021/10/how-to-make-gravy-08B-348x522.jpg)](https://feelgoodfoodie.net/recipe/turkey-gravy/)

  6. 6 **Yumna J.**says: September 29, 2026 at 9:43 am I would replace the pomegranate molasses with about 1 tablespoon of fresh lemon juice to give the sauce some of that tanginess. It won’t have the same sweet-tart flavor, but it will still be delicious! [Reply](https://feelgoodfoodie.net/recipe/stuffed-onions/#comment-177779)

  9. 9 **Shawn**says: July 19, 2026 at 7:54 pm Wow! This dish is so tasty! I’m vegetarian so I subbed Beyond Beef for the ground meat and I also subbed basmati rice for the short grain rice. The dish was perfect. My carnivore husband kept raving about how perfect the spices were and he wants me to make it again. Thanks so much!
